When Richard Kelley MW – the man behind this series of rare parcels – tasted it, he said: “If Champagne is the stars, this is the Northern Lights.” And the comparison is completely justified. The wine is pure, complex and delicate. The name is of course a reference to the famous quote attributed to Dom Pérignon on the night he ‘invented’ Champagne, “Come quick, I am tasting the stars.”
Made using the same method as Champagne, known as Méthode Cap Classique in South Africa, it’s a blend of 60% Chardonnay and 40% Pinot Noir.
