The Champion family have been growing grapes in Chouilly since the mid 18th century. Today it is run by Francois and his two daughters Clemence and Carole. Until recently most of their grapes have been sold to the big Champagne houses but luckily they have now decided to make more under their own label.
The Secret D'Aramis is a blend of 70% Pinot Meunier, 20% Pinot Noir and 10% Chardonnay. For this wine 50% of the juice is from 2013 and 50% from perpetual reserve wine. They keep dosage to a minimum and the resulting wines are fine, elegant and minerally
The wine has a fine, effervescent mousse with aromas of ripe orchard fruits, biscuits and honey that follow through on the palate. Well structured and has a lovely long length.
