The vineyards of Banyuls were historically planted by the Phoenicians  and are the last vineyard before the Spanish border. Banyuls was one of the first regions to receive appellation status in 1936  and covers 882 hectares, incorporating the four fishing port villages of Banyuls-sur-Mer, Collioure, Port-Vendres and Cerbère.

'Baillury' is named  after the stream that plunges down the steep slopes of the appellation, before exiting into the Mediterranean at Banyuls-sur-Mer. It is a blend of 50% Grenache Noir and 50% Grenache Gris, fortified and then macerated on the skins for ten days. It is then aged for five years in an enormous 200 year old wooden vat. The wine is a traditional style of Banyuls. Slightly more savoury than sweet, and is a good introduction to the wines of the appellation.
