Founded in the late 1970s by Michel Morey and his wife Fabienne (from the Pillot clan), Morey-Coffinet produces subtle, delicate wines with traditional winemaking techniques such as regular batonnage and filtering. Since 2009, Thibault has taken over the estate, which boasts a cellar dating back to the late 16th century and a house built in 1820. In 2014, Thibault began practicing biodynamic viticulture and gained certification in 2015. This results in a distinctive Pinot Noir with mineral notes and a strong structure, thanks to the 50-year-old vines.
