Burgundy’s distinctive, yet less prominent white grape variety comes from low-yielding vines over 50 years old. This wine expresses the vibrant character of Burgundy through Aligoté, cultivated with the same dedication to terroir and sustainable practices as Ballot-Millot’s Chardonnay. It emphasizes freshness and minerality by using stainless steel or neutral vessels, minimizing oak influence to preserve sharp acidity.
Aromas of bright lemon-citrus and green apple mingle with hints of white flowers and wet stone. On the palate, it is crisp, clean, and high in acid, featuring a lean, linear profile and a refreshingly crisp finish. Best served young (now through 2027), it’s ideal as an aperitif or paired with oysters, shellfish, goat cheese, light fish, or herb-accented dishes.
