The Chiroubles Vieilles Vignes is made from the domaine's oldest vines, which range in age from 40 to 70 years old. The production process involves three distinct methods: traditional carbonic fermentation, semi-carbonic fermentation, and full destemming. After being aged separately for six to eight months, the three resulting wines are blended and aged for an additional year in the bottle. This meticulous process results in a wine that is more complex, with a robust structure, intense red fruit flavours, and a balanced acidity with fine tannins.
