Akashi-Tai Honjozo Tokubetsu Japanese Sake 720ml
Produced by Akashi Sake Brewery in Hyōgo Prefecture, this is a Tokubetsu Honjozo, indicating a premium honjozo style made with specially designated standards, typically including a higher rice polishing ratio. A small amount of distilled alcohol is added during production to lift aromatics and refine structure, resulting in a sake that emphasises clarity and drinkability.
Tasting note:
The sake presents a clear, bright appearance, with a clean and lightly aromatic nose of steamed rice, fresh cereal and subtle orchard fruit, alongside hints of banana and soft spice. On the palate it is light-to-medium-bodied, with a crisp, dry profile and a smooth, flowing texture. Flavours of rice, pear and delicate nuttiness are supported by a gentle savoury undertone, while the added alcohol contributes to a clean, lifted finish. The finish is refreshing and precise, with lingering dryness and a touch of umami.
A refined and versatile sake, well suited to a wide range of dishes and enjoyable across a range of serving temperatures.
