Cartology reflects Cape heritage through old-vine vineyards. Grapes come from dry-farmed bushvines of Chenin Blanc and Semillon, averaging 40–50 years of age, with none younger than 35 years.
The 2024 vintage is a blend of 92% Chenin Blanc and 8% Semillon. The Chenin is sourced from Skurfberg, Piekenierskloof, Malmesbury, Paardeberg, Bottelary, False Bay, and Tygerberg, while the Semillon comes from the old La Colline block in Franschhoek.
The grapes were hand-sorted and whole-bunch pressed. Fermentation was natural, taking place in cement eggs, clay pots, foudres, and older barrels. The wine spent 12 months on its lees, followed by a further 6 months of ageing.
The nose shows pear, citrus rind, and subtle herbal notes. The palate is precise, energetic, and layered, with a long, savoury finish.
