“Vaillons” is made from 100% Chardonnay grown on 40-year-old vines, The vineyards lie on the left bank of the Serein, where prized Kimmeridgian limestone soils—rich in marine fossils, particularly the small oyster Exogyra virgula—give the wine its hallmark depth and minerality. With a favourable southern exposure, the Vaillons plots (Épinottes, Minots, Roncières, Châtains and Vaillons) combine to create a cuvée of both richness and precision.
In the cellar, the wine undergoes gentle pneumatic pressing and cold settling, followed by spontaneous fermentation in temperature-controlled stainless steel. Maturation is carefully balanced: one-third in tank, one-third in large oak casks, and one-third in Burgundy barrels, before blending prior to bottling. The result is an elegant, finely textured wine with impressive length and concentration, offering both freshness and density.
Equally enjoyable young for its fruit or after 2 to 6 years for added complexity, it pairs beautifully with fish, poultry, white meats and refined charcuterie.
