Wildshark Vineyards is a young and ambitious estate tucked at the foot of the North Downs in Kent. In 2022, they planted 60 acres of vines on chalky, ancient soils—once the bed of a prehistoric sea teeming with marine life. The vineyard’s name is a nod to this oceanic past. The land also has Roman roots, but today it’s all about vines, wildlife, and sustainable farming.
The team at Wildshark follows a minimal-intervention approach. They focus on building a thriving ecosystem, rewilding parts of the land, and planting hedgerows and trees to support beneficial insects and animals. They’re aim is to make top-quality wine with a light environmental footprint.
A crisp clean take on Bacchus, naturally fermented with the grape’s own yeasts. Around 20% of the wine is aged in French oak, bringing added depth and texture. Aromas of citrus, elderflower and ripe peach lead the way, followed by gentle hints of vanilla and spiced poached pear from the oak. The finish is crisp and long, with a clean, flinty minerality that gives it real character.
Ideal with fresh seafood—especially oysters—or a spread of English cheeses.
