Sánchez Romate’s Oloroso is produced from Palomino Fino grapes grown in Jerez’s inland vineyards, where warmer, drier conditions favour early oxidation and structural depth. Unlike biologically aged finos or amontillados, the base wine is fortified to approximately 18% ABV immediately after fermentation, preventing flor formation and allowing full exposure to oxygen from the outset. It then matures oxidatively within a traditional solera system for an average of twelve to fifteen years, developing a deep mahogany colour and richly aromatic complexity. The nose reveals walnuts, polished wood, and hints of dried fig and toffee, while the palate is dry, broad, and velvety, carried by warming acidity and a savoury, nut-laden persistence. Generous yet balanced, this Oloroso reflects Romate’s inland style - concentrated, textural, and marked by understated elegance rather than sweetness.
