Sánchez Romate’s Oloroso Don José is a benchmark expression of traditional oxidative ageing from Jerez’s inland bodegas. Sourced from 100% Palomino Fino grapes grown on albariza soils, the base wine is fully fermented and fortified to around 18% ABV, bypassing flor formation to encourage immediate oxidative development. It matures in seasoned American oak within a multi-tier solera for roughly ten to twelve years, allowing gradual concentration and integration of complex aromatics. The resulting wine shows a luminous chestnut–mahogany hue and an expansive bouquet of toasted walnut, orange peel, leather, and gentle spice. On the palate, it is dry yet rounded, combining depth and warmth with persistent acidity and a long, nut-inflected finish. Don José exemplifies the house’s elegant, textural inland style—robust in flavour yet impeccably balanced, offering both approachability and quiet sophistication.
