Veuve Fourny La Justice – Extra Brut (2020) comes from a single lieu-dit in Vertus Premier Cru, a chalk-rich site that plays perfectly to the house’s Chardonnay-led style. Made from 100% Chardonnay, this is a precise, terroir-focused Champagne with nothing added or taken away. Only first-press juice is used, fermented in small oak barrels to add subtle texture rather than flavour, then left nine months on its lees before bottling. Sulphur use is kept to a minimum, and the wine spends at least three years ageing in bottle before release. Bottled without filtration.
In the glass, this is all about clarity and tension: fine bubbles, bright citrus and white fruit, and a distinctly chalky, saline edge that carries through the palate. The low Extra Brut dosage keeps everything tight and focused, letting the site speak clearly.
