
Château de la Négly is in the village of Fleury d’Aude in the region known as La Clape. Owner Jean Paux-Rosset and oenologist Claude Gros produce superb wines from low yielding, hand-picked fruit. Vines are planted on limestone soils in sight of the Mediterranean and benefit from cooling sea breezes that moderate the ripening of the grapes.
La Falaise is a blend of low yielding, late picked 50% Syrah (sorted berry-by-berry), 40% Grenache and 10% Mourvèdre, destemmed and traditionally fermented and matured for 12 months in a combination of demi-muids and barriques. It is bottled unfined and unfiltered..
It is a sensational wine of richness but with finesse and silky smooth. On the nose there are aromas of raspberry, blackberry and a hint of chocolate. The palate is rich with enormous concentration of fruit and notes of licorice and savoury black olive finishing with ripe sweet tannins.
Its worth decanting the wine a couple of hours before serving.
