2021 Akitu Pinot Noir Blanc

These Pinot Noir grapes are picked super early in the morning and are whole bunch pressed while cold to minimize colour pickup and phenolic extraction from the skins

Slightly more colour than from the 2020 so now with the faintest of pink hues. The aromatics are subtle and focused, very delicate raspberry with honeysuckle, lemons and hint of musk.

The palate dominates with pear and a touch of lime cordial  and a juicy silky acidity. Throughout, there is a savoury line giving umami-like persistence and carry to a tight clean finish.
