The Sicilian cooperative of Cantine Paolini was formed in 1964 by a group of likeminded forward looking growers. Their Nerello Mascalese vines are grown on volcanic limestone soils . After fermentation the wine is aged in large oak vats and then in cement tanks. It is bottle aged for six months’ before release.
On the nose fruity aromas of raspberry and strawberries unfold. The palateis light and velvety with elegant tannins and fresh minerality.
