The parcels of vines for Les Granilites rouge are located on the granitic soils that help make for great Saint-Joseph wines. Fermentation using indigenous yeasts is followed by 4 weeks maceration. The wine is matured for 18months first in oak and then in concrete tanks.
The wine is fresh with delicate notes of white flowers and white fleshed fruit, delicious aromatic notes, underscored by lovely smooth oakiness.
The wine undergoes natural yeast fermentation in 600 litre casks and ages for 8 months. 75% of the ageing process occurs in stainless steel tanks to maintain the wine's freshness and minerality. The remaining 25% of aging takes place in demi-muids barrels, providing "Les Granilites" with consistency, strength, and a complex aroma.
