Produced from high-altitude Adelaide Hills vineyards, predominantly Lenswood, where cool conditions and slow ripening preserve freshness and aromatic detail. The fruit is hand-picked and carefully sorted, with around 80% destemmed and the remainder fermented as whole bunches. Fermentation is slow and gentle before approximately eight months in French oak, allowing the wine to build texture without losing its elegance.
Tasting note:
Perfumed and elegant, with wild strawberry, cherry and rhubarb, lifted by violet, dried herbs and subtle spice. The palate is silky and medium-bodied, with juicy acidity, fine tannins and a savoury, earthy edge. Hints of tea, cedar and gentle oak spice add complexity, while the finish is fresh, focused and persistent.
