Founded in 2020, the domaine is the result of a partnership between Lucie Thiéblemont and Charly Nicolle, who bring together culinary sensibility and deep-rooted winemaking know-how. Charly comes from a long-established Chablis family and has been making wine since 2001, while Lucie’s background as a chef shapes a precise, flavour-focused approach to the wines.
The vineyards are farmed organically, with no chemical weedkillers and a light-touch philosophy in both vineyard and cellar. Most of the fruit comes from around Fleys on the right bank of the Serein, including the “Sur le Moulin” site, where classic limestone soils give the wines their hallmark tension and minerality. In the winery, everything is geared towards purity: fermentation and ageing take place in stainless steel, with extended lees ageing to build texture and complexity without masking the fruit.
The style here is clean, expressive and distinctly Chablisien—wines that combine freshness and precision with a little extra depth and intensity. Still a young domaine, it’s already gaining attention for producing focused, mineral wines that stay true to their origins while offering a slightly richer, more layered profile.
