Producer
Vite Colte is a wine producer based in Barolo, in the heart of Piedmont, north-west Italy. Working with a network of local winegrowers, the winery brings together grapes from across the region, combining the character of Piedmont’s vineyards with a focus on quality and careful winemaking.
Pliset is a richer, more complex expression of Chardonnay, made from hillside vineyards at an average altitude of around 400 metres. The cooler conditions at this elevation help retain freshness and acidity, balancing the wine’s ripe fruit, creamy texture and oak influence.
The grapes are gently pressed and undergo a short period of cold maceration before fermentation in oak barrels. The wine then undergoes malolactic fermentation, which softens the acidity and adds a rounder, creamier texture. It is aged on its fine lees, with regular bâtonnage (stirring the lees) to build complexity and texture. Bottling takes place towards the end of the summer following harvest, followed by an extended period of bottle ageing.
Tasting note
A full-bodied, rounded Chardonnay with ripe fruit, baked apple and citrus zest, alongside notes of toasted hazelnut, vanilla and pastry. The palate is creamy and generous, with flavours of pineapple, apricot and lemon balanced by fresh acidity. Oak adds a gentle toastiness without overwhelming the fruit, leading to a long, satisfying finish. A well-balanced Chardonnay that combines richness with freshness.
Food matching: Excellent with roast chicken, creamy fish dishes, scallops, lobster or mushroom risotto. It would also work well with mature hard cheeses.
