Wildshark Vineyards is a young and ambitious estate tucked at the foot of the North Downs in Kent. In 2022, they planted 60 acres of vines on chalky, ancient soils—once the bed of a prehistoric sea teeming with marine life. The vineyard’s name is a nod to this oceanic past. The land also has Roman roots, but today it’s all about vines, wildlife, and sustainable farming.
The team at Wildshark follows a minimal-intervention approach. They focus on building a thriving ecosystem, rewilding parts of the land, and planting hedgerows and trees to support beneficial insects and animals. They’re aim is to make top-quality wine with a light environmental footprint.
This Pinot Noir is on the lighter side and can be enjoyed slightly chilled. The grapes were hand-picked and fermented with native yeasts, then aged in French oak barrels. Expect bright cherry flavours, a touch of smokiness, and soft notes of vanilla from the oak. The wine has a fresh, lively feel and a smooth finish.
Great with grilled chicken, salmon, mushroom dishes, or even something with a bit of spice like Asian cuisine.
