Domaine Jean Collet et Fils Petit Chablis is crafted from 100% Chardonnay grown on vines averaging 15 years old. The vineyards sit on the Villy plateau, where ancient marl soils rich in fossilised oysters—dating back 130 to 65 million years—give the wine its distinctive character. The domaine follows a sustainable approach, avoiding chemical weed killers in favour of traditional mechanical cultivation like ploughing to preserve soil health.
In the cellar, gentle pneumatic pressing is followed by cold settling, with fermentation occurring naturally and ageing lasting nine months in temperature-controlled stainless steel tanks. The result is a fresh, youthful Petit Chablis that shines early: bright, fruit-forward, and effortlessly appealing. It’s an ideal aperitif and pairs beautifully with fish and seafood starters, as well as charcuterie, offering a tender, fragrant style that’s both lively and easy to enjoy.
