Produced by Akashi Sake Brewery in Hyōgo Prefecture, this is a Daiginjo Genshu crafted exclusively from Yamadanishiki rice, Japan’s most revered sake rice, known for its purity and finesse. The rice is highly polished (typically to 40–50%), and the sake is bottled undiluted (genshu) to retain concentration, texture and depth. Fermentation is slow and carefully controlled to preserve aromatic precision and clarity.

Tasting note:
The sake is crystal clear, with a refined and lifted aromatic profile of white peach, melon and pear, layered with delicate floral notes and a subtle rice sweetness. On the palate it is rich yet poised, with a silky, concentrated texture balanced by freshness and definition. Flavours of stone fruit, lychee and soft citrus unfold with precision, while a gentle umami core adds depth. The genshu style brings weight and intensity, yet remains finely tuned. The finish is long, clean and elegant, with lingering fruit, floral tones and a subtle savoury edge.
