Akashi-Tai Junmai Daiginjo Genshu Japanese Sake 720ml
Produced by Akashi Sake Brewery in Hyōgo Prefecture, this is a Junmai Daiginjo Genshu, representing one of the highest grades of sake. It is made from premium rice polished to a high degree (typically ≤50%), with no added alcohol (junmai), and bottled undiluted (genshu) to preserve intensity and structure. Fermentation is slow and temperature-controlled to maximise aromatic purity and finesse.
Tasting note:
The sake is crystal clear, with an elegant and lifted aromatic profile of white peach, melon and pear, alongside delicate floral notes and a hint of rice sweetness. On the palate it is rich yet precise, with a silky, concentrated texture balanced by freshness. Flavours of stone fruit, lychee and subtle umami unfold with clarity, while the genshu style adds depth and weight without heaviness. The finish is long, clean and refined, with lingering fruit, floral tones and a gentle savoury edge.
