HONJOZO TOKUBETSU GOHYAKUMANGOKU 300ml - Medium bodied, clean and crisp, with notes of fresh melon. Particularly good with fresh seafood and grilled meats.
HONJOZO GENSHU TOKUBETSU GOHYAK 300ml - A full bodied sake with a velvety rich texture, hints of fresh fruit and savoury undertones. A superb accompaniment for rich dishes and various types of cheese.
JUNMAI TOKUBETSU YAMADANISHIKI 300ml - A lightly aromatic traditional sake with a distinct rice character and light savoury notes of chestnut and fig. Works well with stews and light casseroles but also sushi and sashimi.

Akashai Tai is a small, family‑run brewery nestled at the foot of misty, forested hills in southern Japan. For generations, the brewers here have drawn on pure mountain spring water and locally grown rice to craft their sake, honouring a tradition that balances patience, precision, and passion. Each bottle reflects the vision and craftsmanship of Kimio Yonezawa, the master behind their creation and production.
Far from the neutral, dry image that many associate with sake, Akashi-Tai stands out for its depth and personality. When head brewer Kimio Yonezawa began making sake, he was drawn to the Yamadanishiki rice variety, which he considered ideal. Rather than strip away its flavour through excessive polishing, he chose to preserve its rich character, using minimal milling to highlight the natural taste of the rice he loved.
Over the years, Yonezawa has refined his techniques and broadened the Akashi-Tai range, introducing sakes with higher degrees of rice polishing for more nuanced expressions. The result is a collection that appeals to both newcomers and connoisseurs alike — described as dry yet velvety, creamy, well-balanced, and fresh, with floral and savoury notes, and hints of citrus and honey.
