The Champion family have been growing grapes in Chouilly since the mid 18th century. Today it is run by Francois and his two daughters Clemence and Carole. Until recently most of their grapes have been sold to the big Champagne houses but luckily they have now decided to make more under their own label.

Their Rose Carat is produced in very small quantities of no more than 4000 bottles a year and is only produced in years where harvest conditions are right. The wine is a blend of 90% white wine and 10% reserve red wine. The white is made up of equal quantities Chardonnay, Pinot Meunier and Pinot Noir. The red is mostly Pinot Noir with a small amount of Pinot Meunier and aged predominantly in stainless steel with some of the Pinot aged in 500l oak barrels. The base vintage is currently 2016 and is kept on it's lees for a minimum of four years before disgorgement.

A pale salmon pink in colour with a delicate mousse, this is a refined and elegant Champagne. A delightful light nose of delicate toasty red fruit leading to fresh strawberries and cream, fruit cocktail and refreshingly balanced acidity and minerality.
