Distillerie de Paris Galabe Rhum
This is the first distillery to open in Paris in over a century. Their Galabe Rhum/Rum is made using sugar cane juice that is slowly reduced in one of the numerous trapiches dotted around the tropical island of Reunion. It forms a molasses like mass that becomes a solid when cooled. This grated sugar (galabe) is then imported to France where it is diluted with water, fermented and distilled by the Julhes brothers at Distillerie de Paris. The alcohol is then aged in barrels for 11 months.
It's a complex and fruity spirit, with a combination of soft vegetal and sharper citrus character.
