From 100% Chardonnay grown on vines averaging 25 years old. The vineyards stretch across Chablis, Préhy and Villy, and are rooted in classic Kimmeridgian and Portlandian limestone soils from the Upper Jurassic period. These soils—alternating between dense limestone and softer clay marls rich in fossilised marine life—are key to the wine’s structure and finesse. As in the rest of the domaine, the vineyards are farmed sustainably, with mechanical cultivation preferred over chemical weed control.
In the winery, gentle pneumatic pressing is followed by cold settling, with spontaneous fermentation and ageing for 9 to 10 months in temperature-controlled stainless steel tanks. The wine opens with notes of citrus and candied fruit, leading to a refined, elegant palate with impressive length and a subtle liquorice finish. Fresh yet structured, it works beautifully as an aperitif and pairs effortlessly with seafood, snails and charcuterie. While ready to enjoy, it will continue to develop nicely over 3 to 6 years.
