This is the he flagship expression from Kaiyo Whisky, made from 100% malted barley and matured in rare Japanese Mizunara oak casks. Mizunara is one of the most distinctive and expensive woods used in whisky, known for adding unusual notes such as sandalwood, coconut and soft spice. After maturation, the casks are also rested at sea for a short period, where the movement and changing conditions are believed to subtly influence the whisky as it develops.
The result is a smooth and elegant whisky that highlights the character of Mizunara oak. Expect aromas of citrus peel, vanilla and toasted coconut, followed by flavours of honey, baked apple and gentle spice on the palate. The finish is soft and lingering, with hints of dried fruit, cedar and warming oak spice, making it an approachable and refined dram.
