Produced by Langham Wine Estate in Dorset, Corallian is the Chardonnay-dominant counterpart to the more Pinot-led Culver, named after the ancient coral-rich limestone strata lying beneath the vineyard. The current blend is 88% Chardonnay, 8% Pinot Noir and 4% Pinot Meunier, from Langham’s single 34-hectare site at Crawthorne Farm, planted on flinty clay over deep Cretaceous chalk.
Winemaking:
Langham follows a low-intervention, oxidative approach, with the grapes pressed oxidatively before spontaneous fermentation in a combination of stainless steel and older French oak. The wine undergoes full malolactic fermentation and extended lees ageing with regular bâtonnage, before being bottled unfined and unfiltered. Secondary fermentation takes place in bottle, followed by 15–18 months on lees, with a very low 1.5 g/L dosage.
Tasting note:
The nose is bright, complex and distinctly mineral, showing lemon zest, bruised apple, nectarine and jasmine, with layers of sea spray, charred lemon, blood orange and subtle nutty, savoury notes. The palate is rich yet incredibly energetic, with ripe stone fruit and orchard fruit giving way to a saline core of crisp acidity. Fine bubbles and extended lees ageing bring a creamy, textured feel, while the chalky mineral character keeps the wine focused and precise. The finish is long, dry and beautifully saline, with lingering citrus, orchard fruit and savoury complexity.
A superb example of modern English sparkling wine, combining Chardonnay richness, chalk-driven minerality and Langham’s distinctive low-intervention character. It has also received significant recognition, including Best Classic Cuvée NV/MV Trophy and Gold at the WineGB Awards.
