Noah’s Mill Bourbon is a Kentucky straight bourbon whiskey produced by Willett Distillery in Bardstown, Kentucky and bottled at 57.15 % ABV (114.3 proof) as a small-batch, non-age-statement bourbon. Originally released with a 15-year age statement, it now blends bourbons of varying maturation to deliver a richly flavoured profile.
On the nose, Noah’s Mill often shows vanilla, caramel, toasted oak and spice, with deeper notes of nuts, dried fruit and brown sugar. The palate is robust and full-bodied, combining spice, toasted pecans, cinnamon and dark caramel with hints of dried fruit and warm oak. The finish is long and warming, with lingering spice and oak character — a classic high-proof bourbon experience that’s satisfying neat or with a little water.
