Produced by Akashi Sake Brewery in Hyōgo Prefecture, this is a Tokubetsu Honjozo Genshu — meaning a premium honjozo sake made with special designation standards and bottled undiluted (genshu), resulting in higher alcohol and a more concentrated profile. It is crafted using locally grown rice polished to a refined level, with a small addition of distilled alcohol to enhance aroma and structure, as per honjozo style.
Tasting note:
The sake shows a clear, bright appearance, with an aromatic profile of steamed rice, light cereal notes and subtle orchard fruit, complemented by hints of banana and soft spice. On the palate it is full-bodied and structured, with a rich, concentrated texture due to its genshu style, balanced by a clean, dry backbone. Flavours of rice umami, pear and gentle nuttiness are supported by a touch of warmth from the elevated alcohol. The finish is long and clean, with lingering savoury depth and soft spice.
